Easy Skillet Chicken & Riced Cauliflower

"Skillet-cooked chicken and cauliflower with Parmesan and oregano - ready in just 30 minutes!"
Ingredients:
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 (7 ounce) package Green Giant® Riced Cauliflower - any variety
  • 0.5 cup chicken broth
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh oregano
Instructions:
  • Season chicken with salt and pepper to taste. Heat olive oil in a large nonstick skillet over medium heat and brown the chicken. Remove and set aside.
  • Sauté onion until soft, about 3 minutes.
  • Sauté Green Giant® Riced Cauliflower with garlic for 3 minutes.
  • Add the flavorful broth and bring it to a bubbling boil.
  • Add the chicken back into the skillet and let it simmer for 4 minutes until the vegetables are tender and the chicken is fully cooked.
  • Mix in the grated Parmesan cheese, freshly squeezed lemon juice, and aromatic oregano.
