Easy one-skillet Spanish rice dish with flavorful salsa, tomatoes, and chicken.
Ingredients:
  • 1 (6.8 ounce) package Spanish-style rice mix
  • 1 tablespoon butter
  • 2 cups hot water
  • 1 skinless, boneless chicken breast half - cut into cubes
  • 1 cup salsa
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers
Instructions:
  • In a large skillet over medium heat, toast vermicelli and rice in butter until golden brown. Add water, chicken, salsa, and tomatoes. Bring to a boil, then cover and simmer for 25-30 minutes until liquid is absorbed.
