Quick and creamy stovetop chicken divan with broccoli, no canned soups. Flavorful and ready in no time.
Ingredients:
  • 4 tablespoons unsalted butter, divided
  • 2 (8 to 9-ounce) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 3 cups bite-size broccoli florets
  • 1/4 cup water
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups whole milk
  • 4 ounces cream cheese, cubed and softened
  • 3 ounces (about 3/4 cup) shredded sharp white cheddar cheese, divided
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon chopped fresh parsley, plus more for garnish
Instructions:
  • In a 10-inch cast-iron skillet over medium-high heat, melt 1 tablespoon of butter. Add chicken in an even layer, season with 1 teaspoon of salt and 1/4 teaspoon of pepper. Cook until browned, about 5 minutes. Remove chicken with a slotted spoon and set aside on a plate.
  • Steam the broccoli in the skillet: Combine the broccoli and 1/4 cup water in the skillet. Cover and cook over medium-high heat until the broccoli is vibrant green and tender, about 3 minutes. Use a slotted spoon to transfer the broccoli to the plate with the chicken, leaving the skillet unwiped.
  • Preheat the broiler by adjusting an oven rack to be 6 inches away from the heat source.
  • Prepare the sauce by melting 3 tablespoons of butter in a skillet over medium heat for about 1 minute. Add the flour and whisk constantly for 1 minute, then gradually whisk in the milk until smooth.
  • Simmer the chicken and broccoli together over medium heat until the mixture thickens and the chicken reaches an internal temperature of 165°F, approximately 6 minutes. Stir occasionally.
  • Stir in cream cheese, 1/2 cup cheddar, 1/4 tsp salt, and 1/4 tsp pepper until melted. Combine panko, oil, parsley, 1/4 cup cheddar, and 1/4 tsp salt. Sprinkle over chicken. Broil until golden brown, about 2 minutes. Garnish with parsley and serve.
