Skillet Meatball Goulash

Turn up the heat with this Eastern European-inspired spicy meatball and pasta skillet using homemade turkey meatballs. Upgrade your meal while saving on groceries!
Ingredients:
  • 1/2 cup chopped green bell pepper
  • 1 medium onion, chopped (1/2 cup)
  • 1 (12-oz.) jar beef gravy
  • 1 (14-oz.) can beef broth
  • 3/4 cup water
  • 2 tablespoons chili sauce
  • 12 oz. (3 cups) frozen cooked Italian meatballs
  • 8 oz. (3 1/2 cups) uncooked mini lasagna noodles (mafalda)
  • 1/2 cup light sour cream
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a 12-inch nonstick skillet coated with cooking spray, sauté bell pepper and onion over medium-high heat for 2 to 3 minutes until crisp-tender.
  • Combine gravy, broth, water, chili sauce, and meatballs in a pot and mix thoroughly. Bring to a boil, stirring occasionally, then reduce heat to medium. Cover and cook for 5 minutes or until meatballs are thawed.
  • Toss in uncooked noodles and mix thoroughly. Cover and cook for about 10 minutes until noodles are tender and meatballs are hot, stirring occasionally. Remove from heat, then gently fold in sour cream until fully incorporated. Garnish with parsley before serving.
