Skillet Shrimp and Veggie Dinner

30-minute citrus shrimp and bulgur wheat stir-fry - a flavorful and satisfying meal!
Ingredients:
  • 2 1/2 cups chicken broth
  • 1 1/2 cups uncooked bulgur wheat
  • 1 teaspoon lemon-pepper seasoning
  • 1 medium green or red bell pepper, chopped (1 cup)
  • 2 medium carrots, thinly sliced (1 cup)
  • 1 jar (2.5 oz) sliced mushrooms, undrained
  • 1/2 lb cooked peeled deveined medium shrimp, thawed if frozen
  • 1 teaspoon grated lemon peel
Instructions:
  • First, bring the broth to a boil in a 2-quart saucepan. Then, add all the remaining ingredients, excluding the shrimp and lemon peel, and bring it to a boil again.
  • Lower the heat and cover the pot to gently simmer for 12 minutes without lifting the lid or stirring.
  • Add the shrimp and lemon peel, and cook until everything is heated through.
