Skinny Air Fryer Funnel Cakes

Skinny funnel cakes made guilt-free in your air fryer for a carnival food craving fix.
Ingredients:
  • nonstick cooking spray
  • 1 cup almond flour
  • 1 tablespoon almond flour
  • 1 cup nonfat plain Greek yogurt
  • 4 tablespoons erythritol confectioners' sweetener (such as Swerve®), divided
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
Instructions:
  • Preheat your air fryer to 325 degrees F (165 degrees C as per the manufacturer's instructions. Line the basket with parchment paper and give it a light spray of nonstick cooking spray.
  • Combine almond flour, Greek yogurt, 2 tablespoons sweetener, baking powder, cinnamon, vanilla extract, and salt in a bowl. Mix thoroughly until the dough comes together using your hands.
  • Sprinkle flour over your work surface, divide the dough into 4 equal portions, and form them into balls. Cut each ball into 8 equal pieces using a bench scraper. Roll each piece in flour and shape into a long, thin rope by rolling between your hands (the thinner, the crispier). Place the 8 ropes in a circular mound in the air fryer basket. Repeat with the rest of the dough balls. Give each funnel cake a quick spray with cooking spray.
  • Air fry the funnel cakes until they are golden brown, about 5 to 6 minutes. Flip them over, spray with cooking spray, and air fry for an additional 3 to 4 minutes. Finally, sprinkle the remaining 2 tablespoons of sweetener over the top.
