Ingredients:
  • 1 medium apple or pear
  • 4 whole wheat English muffins, split
  • 2 tablespoons Dijon-style mustard
  • 4 ounces Canadian-style bacon (4 slices)
  • 4 ounces low-fat Swiss cheese (4 slices)
Instructions:
  • Slice the apple into rings, then spread mustard on the cut sides of the muffin halves.
  • Place Canadian-style bacon, apple rings, and Swiss cheese on four of the muffin halves, then cover with the remaining muffin halves, cut sides facing down.
  • Preheat a large nonstick skillet or griddle over medium-low heat. Add sandwiches and cook for 9 to 10 minutes until golden brown and cheese begins to melt, flipping once. Optionally secure with toothpicks for serving.
