Skinny Apple Griddle Cakes

Healthier griddle cakes made with whole wheat flour, chopped apples, and apple pie spice. Low in saturated fat and high in fiber. Only 220 calories per serving. Enjoy any day of the week!
Ingredients:
  • 1 cooking apple (such as Jonathan or Granny Smith), cored and finely chopped (about 3/4 cup)
  • 1 teaspoon lemon juice
  • 3/4 cup Gold Medal™ whole wheat flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon apple pie spice or ground cinnamon
  • 1/8 teaspoon salt
  • 3/4 cup fat-free milk
  • 1 egg white
  • 2 tablespoons canola oil
  • Nonstick cooking spray
  • 1 cup unsweetened applesauce
  • 1/8 teaspoon apple pie spice or ground cinnamon
  • Apple pie spice or ground cinnamon (optional)
  • Fresh fruit (optional)
Instructions:
  • Combine apples with a splash of lemon juice in a small bowl and set aside. In a medium bowl, mix whole wheat flour, sugar, baking powder, 1/4 teaspoon of apple pie spice, and salt. In another small bowl, whisk together milk, egg white, and oil until smooth.
  • Pour the milk mixture into the flour mixture all at once, stirring only until just moistened (batter should be lumpy). Carefully fold in the apple mixture.
  • Prepare a griddle or skillet with nonstick cooking spray and preheat over medium heat until drops of water sizzle on contact. Pour a generous 1/4 cup of batter for each pancake onto the hot griddle, spreading it into 3- to 4-inch circles.
  • Cook the pancakes until they are golden brown on each side, flipping them when the surfaces are bubbly and edges are slightly dry. Mix together the applesauce and the 1/8 teaspoon of apple pie spice in a small bowl, and serve with the pancakes.
  • Enhance the flavors with a sprinkle of extra apple pie spice before serving alongside some fresh fruit.
