Healthier and convenient salad wraps: Pack salad and lettuce separately, assemble when ready. No utensils needed to enjoy this fresh and crunchy lunch or picnic option.
Ingredients:
  • 12 ounces shredded cooked turkey breast
  • 1 cup chopped green apple
  • 1/2 cup chopped celery
  • 1/2 cup sliced green onions
  • 1/2 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup dried tart cherries
  • 1 carton (6 oz) Greek plain yogurt
  • 2 tablespoons lemon juice
  • 1/2 to 1 teaspoon bottled hot pepper sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 12 butterhead (Boston or Bibb) lettuce leaves
Instructions:
  • Combine the turkey, apple, celery, green onions, parsley, walnuts, and dried cherries in a spacious bowl.
  • Combine yogurt, lemon juice, hot pepper sauce, salt, and black pepper in a small bowl. Mix the yogurt mixture into the turkey mixture until fully combined.
  • Spoon the turkey mixture into the center of each lettuce leaf, dividing evenly.
