Nourishing skinny soup bursting with veggies and satisfying flavors to keep you full and on track with your diet.
Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 4 cups vegetable broth
  • 1 small head cabbage, chopped
  • 1 (14.5 ounce) can chopped stewed tomatoes
  • 3 carrots, peeled and cut into coins
  • 2 teaspoons paprika
  • 1 bunch kale, chopped
  • 1 (15 ounce) can chickpeas
  • salt and ground black pepper to taste
Instructions:
  • In a large pot, sauté onion and garlic in olive oil until onion is translucent. Stir in broth, cabbage, tomatoes, carrots, and paprika. Simmer until cabbage is tender, about 10-15 minutes.
  • Add vibrant kale to the pot, covering it to lock in all the delicious steam. Cook until the kale is tender, around 7 to 10 minutes. Next, introduce the chickpeas to the mix, cooking until they are warmed through, about 1 to 2 minutes. Season generously with salt and pepper. Serve your tantalizing creation piping hot.
