Healthy, light, and satisfying baked beans - the perfect summer side dish without the extra fat and cholesterol.
Ingredients:
  • 1 large sweet onion, halved lengthwise and thinly sliced (2 cups)
  • 3 tablespoons butter
  • 1/3 cup maple or maple-flavor syrup
  • 1/3 cup white balsamic vinegar or lemon juice
  • 2 tablespoons packed brown sugar
  • 2 tablespoons snipped fresh sage
  • 2 tablespoons Muir Glen™ tomato paste
  • 1/2 teaspoon black pepper
  • 2 cans (15.5 or 16 oz) navy beans, rinsed and drained
  • 2 cans (15.5 or 16 oz) butter beans, rinsed and drained
  • 1 can (15 oz) Progresso™ Chick Peas, rinsed and drained
  • 1/2 cup light sour cream
  • Yellow, red, and/or green tomatoes, chopped (optional)
  • Sage leaves (optional)
Instructions:
  • Cook the onion in a 12-inch skillet with melted butter over medium heat until very tender and browned, stirring occasionally for about 15 minutes. Add in maple syrup, balsamic vinegar, brown sugar, sage, tomato paste, salt, and pepper. Mix in navy beans, butter beans, and chickpeas, stirring well to coat them with the flavorful mixture.
  • Simmer, stirring occasionally, for 10 to 15 minutes until heated through. Serve in a bowl, top with sour cream, and garnish with tomatoes and sage leaves, if desired.
