Moist bars with 45% less total fat and 83% less cholesterol using unsweetened applesauce in place of some oil.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup refrigerated or frozen fat-free egg product, thawed
  • 1 1/2 cups shredded carrot
  • 1 medium zucchini, shredded (1 cup)
  • 3/4 cup packed brown sugar
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/3 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • 1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
  • 1 cup powdered sugar
Instructions:
  • Preheat the oven to 350°F. Mix flour, baking powder, ginger, baking soda, and salt in a large bowl. In another large bowl, combine egg product, carrot, zucchini, brown sugar, raisins, walnuts, oil, applesauce, honey, and vanilla. Gently fold the carrot mixture into the flour mixture until just combined. Spread the batter into an ungreased 13x9x2-inch baking pan.
  • Bake for approximately 25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan on a wire rack.
  • In a medium mixing bowl, use an electric mixer to whip cream cheese and powdered sugar until fluffy. Spread the frosting on top of the bars and then cut them into individual servings.
