Boost flavor and nutrition with shredded carrots, resulting in a lighter and healthier dish.
Ingredients:
  • 24 jumbo pasta shells (from 12-oz box)
  • 1 lb lean Italian turkey sausage, casings removed
  • 1 container (15 oz) light ricotta cheese
  • 2 cups shredded reduced-fat Italian cheese blend (8 oz)
  • 1 box (9 oz) frozen spinach, thawed, squeezed to drain
  • 1/2 teaspoon dried basil leaves
  • 3/4 cup finely shredded carrots (1 medium)
  • 1 jar (25.5 oz) Muir Glen™ organic Italian herb pasta sauce
Instructions:
  • Preheat oven to 350°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Prepare pasta as instructed on package, excluding salt.
  • Crumble sausage in a 10-inch nonstick skillet and cook over medium heat, stirring frequently, until no longer pink. Drain any excess grease.
  • Combine ricotta cheese, 1 cup of Italian cheese blend, spinach, and basil in a medium bowl. Gently fold in carrots and sausage until well mixed.
  • Spread a generous layer of the pasta sauce on the bottom of the baking dish. Fill each pasta shell with about 3 tablespoons of the sausage mixture and arrange them filled side up in the dish. Pour the rest of the pasta sauce over the stuffed shells. Cover the dish with a 15-inch piece of foil that has been sprayed with cooking oil.
  • Bake for 40 minutes. Then, uncover and sprinkle with the remaining 1 cup of Italian cheese blend. Bake for an additional 5 to 10 minutes, or until the cheese is melted and bubbly.
