Skinny Cherry Raspberry Ice Cream

Indulge in a delightful and refreshing frozen dessert.
Ingredients:
  • 3/4 cup sugar
  • 1 envelope unflavored gelatin
  • 4 cups whole milk
  • 4 eggs, beaten
  • 1 pound fresh dark sweet cherries, pitted and halved or 1 1/2 packages (10 oz) Cascadian Farm™ frozen sweet cherries
  • 1 package (10 oz) Cascadian Farm™ frozen unsweetened red raspberries or 2 1/2 cups fresh red raspberries
  • 1/4 cup Cascadian Farm™ frozen orange juice concentrate, thawed
  • Sliced fresh strawberries and/or fresh mint leaves (optional)
Instructions:
  • In a large saucepan, mix sugar and gelatin, then add milk. Heat the mixture over medium heat until it begins to boil. Remove from heat. Blend about 1 cup of the hot mixture into beaten eggs; then return all to the saucepan. Cook and stir for 2 to 3 minutes until the mixture coats the back of a clean metal spoon. Avoid boiling. Add cherries, raspberries, and orange juice concentrate. Cover and refrigerate for 4 to 24 hours until set.
  • Pour the mixture into a 4- or 5-quart ice cream freezer as per the manufacturer’s instructions. Enjoy right away or let it sit for 4 hours for optimal flavor. To enhance presentation, top with sliced strawberries and/or mint leaves.
