Skinny Chocolate Glazed Cookies

Healthier chocolate walnut cookies with a hidden surprise, perfect with green tea for a delightful treat.
Ingredients:
  • 1 ounce sweet baking, bittersweet, or semisweet chocolate, melted and cooled slightly
  • 5 tablespoons unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1/3 cup unsalted walnuts, finely chopped
  • 30 walnut halves
  • Chocolate Glaze (recipe below)
  • Powdered sugar (optional)
  • 2 tablespoons fat-free milk
Instructions:
  • Preheat oven to 350°F. In a medium bowl, beat butter with an electric mixer until smooth. Mix in granulated sugar until creamy. Add egg, egg yolk, and vanilla, beating well. Stir in melted chocolate, then fold in flour and chopped walnuts. Chill covered for 1 hour before proceeding.
  • Roll dough into 1-inch balls, then arrange them on parchment-lined cookie sheets. Gently press a walnut half onto the top of each cookie. Bake for 10 to 12 minutes, until edges turn golden brown. Let cookies cool on a wire rack.
  • Drizzle the Chocolate Glaze generously over the cooled cookies and allow it to set. For an extra touch, sprinkle the cookies with powdered sugar. Keep them fresh by storing in an airtight container with layers of waxed paper for up to a week, or freeze for a month.
  • Prepare the chocolate glaze by melting 1 ounce of sweet baking, bittersweet, or semisweet chocolate with 1 tablespoon of unsalted butter in a small saucepan. Remove from heat and stir in 1/4 teaspoon of vanilla, 1 cup of powdered sugar, and 2 tablespoons of fat-free milk until well combined.
