Skinny Chutney Chicken Salad with Couscous

A healthier twist with less fat and extra fiber. Sweet and savory flavors combined for a satisfying and quick dish you'll adore.
Ingredients:
  • 1 3/4 cups reduced-sodium chicken broth
  • 1 1/4 cups whole wheat couscous
  • 1/2 cup mango chutney, large pieces cut up
  • 1/4 cup bottled fat-free vinaigrette
  • 1 package (6 oz) refrigerated cooked seasoned chicken breast strips, cut into bite-size pieces (about 1 1/2 cups)
  • 1/2 cup golden raisins or raisins
  • 1 cup coarsely chopped seeded cucumber or radishes
  • 1 small cucumber, cut into spears
Instructions:
  • Bring chicken broth in a medium saucepan to a boil. Stir in couscous, cover, and remove from heat. Allow to stand for 5 minutes, then fluff couscous lightly with a fork.
  • In a medium bowl, mix together sweet mango chutney, flavorful olive oil, and tangy salad dressing. Add in tender chicken, plump raisins, crisp cucumber, and fluffy cooked couscous. Toss gently until everything is well-coated.
  • Garnish with crisp cucumber spears.
