Healthier twist on a classic treat with reduced saturated fat, zero cholesterol, and less sugar for guilt-free indulgence.
Ingredients:
  • Nonstick cooking spray
  • 1 cup Gold Medal™ all-purpose flour
  • 1 cup Gold Medal™ whole wheat flour
  • 1/4 cup ground flaxseeds or wheat germ
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 cup refrigerated or frozen egg product, thawed
  • 3/4 cup sugar
  • 1/2 cup canola oil
  • 1/3 cup fat-free milk
  • 1 cup peeled (if desired) and shredded zucchini
  • 1 medium-size ripe banana, mashed (1/2 cup)
  • 1/2 cup miniature semisweet chocolate pieces
Instructions:
  • Preheat the oven to 350°F and lightly grease a 13x9x2-inch baking pan. In a large bowl, mix together all-purpose flour, whole wheat flour, flaxseeds or wheat germ, cocoa powder, baking powder, and salt. Create a well in the center of the mixture and leave it aside.
  • In a medium bowl, combine egg product, sugar, oil, and milk until fully blended. Add zucchini and banana, then mix in with flour mixture. Gently fold in chocolate pieces. Transfer batter to prepared pan, spreading evenly.
  • Bake for approximately 25 minutes or until the top springs back when lightly touched. Allow to cool completely on a wire rack before cutting into squares.
