Lighter, healthier twist on classic Chicken Parmesan, with same bold flavors and satisfying taste.
Ingredients:
  • 1 cup crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 4 oz uncooked multigrain angel hair pasta
  • 1 cup low-sodium chicken broth, warmed
  • 8 oz uncooked chicken breast tenders (not breaded)
  • 1 teaspoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup fresh basil leaves, shredded
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • In a small saucepan, gently warm the Tomato Sauce ingredients over medium-low heat for 5 to 7 minutes to allow the flavors to meld. Once done, take it off the heat and cover to maintain warmth.
  • Bring a 4-quart saucepan of water to a boil over medium-high heat. Cook the pasta according to package instructions, then drain. Return the pasta to the pan, add chicken broth, and toss to coat.
  • In a spacious bowl, gently mix together the chicken, olive oil, salt, and pepper.
  • Heat a 10-inch skillet over medium-high heat until hot. Cook the chicken for 2 to 3 minutes until browned on one side, then turn and cook for an additional 2 to 3 minutes until browned on the other side.
  • Portion the pasta onto 4 plates and garnish with fresh basil. Lay one-fourth of the chicken on each portion, then generously drizzle with tomato sauce and sprinkle with Parmesan cheese. Serve promptly for the best flavors.
