Skinny Ham and Potato Casserole

Healthier version of a classic dish, with significantly lower calories and fat content, while still delivering the same delicious taste.
Ingredients:
  • 4 cups cubed (1/2 inch) unpeeled red potatoes (4 medium)
  • 1 teaspoon olive or canola oil
  • 1 cup chopped green bell pepper (1 medium)
  • 1/4 cup chopped onion
  • 1 1/4 cups fat-free (skim) milk
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1/4 cup reduced-fat or fat-free mayonnaise
  • 1/8 teaspoon black pepper
  • 1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
  • 2 cups cubed cooked ham
Instructions:
  • Place potatoes in a 2-quart saucepan and add just enough water to cover them. Bring to a boil, then simmer on medium-low heat for 8 to 10 minutes until the potatoes are tender. Drain excess water.
  • Preheat the oven to 350°F. In a 10-inch nonstick skillet, heat oil over medium-high heat. Sauté bell pepper and onion for 3 to 4 minutes, stirring occasionally, until vegetables are tender.
  • In a small bowl, whisk together the milk and flour until smooth. Pour the mixture into the skillet with the vegetables. Bring to a boil, then simmer for 2 to 3 minutes until thickened, stirring constantly. Add mayonnaise, pepper, and cheese, and stir until the cheese is melted.
  • Layer the ham and potatoes in a 2-quart casserole dish. Pour the milk mixture over the ham and potatoes, then gently stir to combine. Bake the casserole uncovered for 25 to 30 minutes, until it is bubbly and has a light golden brown crust on top.
