Skinny Italian Beef Sandwiches

Healthier, heartier sandwiches with reduced fat and increased fiber content. A delicious way to boost your nutrition and cut down on saturated fat and calories.
Ingredients:
  • 3-lb boneless beef bottom round or rump roast
  • 1 medium onion, sliced
  • 1 cup fat-free Italian dressing (not creamy)
  • 1 tablespoon balsamic vinegar
  • 12 whole wheat burger buns, toasted, if desired
  • 3/4 cup shredded reduced-fat Italian cheese blend (3 oz)
  • 3/4 cup thinly sliced roasted red bell peppers (from a jar)
  • 3/4 cup fresh basil leaves
Instructions:
  • Trim the fat from the beef, cut into 4 pieces, and place in a 4- to 5-quart slow cooker. Top with onion and dressing. Cover and cook on Low for 10-12 hours or on High for 5-6 hours until the beef is tender.
  • Using a slotted spoon, transfer the beef and onion from the cooker to a cutting board. Allow them to cool briefly. Shred the beef using two forks. Reserve 1 cup of liquid in the cooker. (If you prefer, you can save the remaining liquid for dipping sandwiches. Simply heat it in a saucepan over low heat until hot when ready to serve.)
  • Add the shredded beef and onion back into the flavorful liquid in the cooker. Stir in the vinegar until well combined. Cover and cook on High heat for 10 to 15 minutes, or until everything is heated through.
  • When ready to enjoy, generously spoon 1/2 cup of beef mixture into each bun and garnish with cheese, roasted peppers, and fresh basil.
