Healthy Polynesian-inspired dish ready in 20 minutes, with reduced sat fat and sodium compared to the original recipe. Perfect for summer cravings.
Ingredients:
  • 4 boneless top loin pork chops, cut 3/4 inch thick (about 1 1/4 pounds total)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 fresh pineapple, peeled and cored
  • 3/4 cup Yoplait® plain fat-free yogurt
  • 1/3 cup low-sugar orange marmalade
  • 2 tablespoons coarsely chopped toasted pecans
  • 1 tablespoon snipped fresh thyme
Instructions:
  • Season both sides of the pork chops generously with a blend of salt and pepper. Slice the pineapple into eight 1/2-inch-thick rounds. Mix the yogurt with 2 tablespoons of the marmalade for a tasty sauce.
  • Grill chops over medium coals for 4 minutes, then add pineapple. Brush with remaining marmalade and grill for another 3 to 5 minutes until pork reaches 160°F and pineapple has grill marks, turning once.
  • Place the pineapple and chops artistically on individual serving plates. Drizzle the yogurt mixture over the pineapple and chops, then top with nuts and thyme for added flavor and presentation.
  • Save money by using a 15.25-ounce can of pineapple slices (in juice pack) instead of a fresh peeled pineapple from the store. The can contains 8 slices, ideal for 4 servings.
