Skinny Seven-Layer Salad

Timeless comfort food!
Ingredients:
  • 1 box (9 oz) frozen green peas
  • 6 cups bite-size pieces mixed salad greens
  • 2 medium stalks celery, thinly sliced (1 cup)
  • 1 cup thinly sliced radishes
  • 8 medium green onions, sliced (1/2 cup)
  • 4 slices bacon, crisply cooked and crumbled
  • 1/2 cup reduced-fat mayonnaise or salad dressing
  • 1 cup Yoplait® Fat Free plain yogurt
  • 1/4 cup grated Parmesan cheese or shredded Cheddar cheese (1 oz)
Instructions:
  • Prepare the peas according to the box instructions, then refresh them in cold water and drain.
  • In a large glass bowl, arrange salad greens as the base. Top with layers of celery, radishes, onions, bacon, and peas.
  • Combine the creamy mayonnaise and tangy yogurt, then generously spread the mixture over the peas, ensuring they are completely covered and reaching the edge of the bowl. Finish by sprinkling the cheese on top.
  • Chill in the refrigerator for a minimum of 2 hours and up to 12 hours to allow the flavors to meld. Give it a toss before serving if preferred and store covered in the fridge.
