Skinny Seven-Layer Taco Dip

Lightened up guilt-free recipe with only 170 calories and 60% less saturated fat. Indulge without the worry!
Ingredients:
  • 1 1/2 pounds ground uncooked turkey breast
  • 1 jalapeño chile pepper, seeded and finely chopped (optional)
  • 1 packet (1 oz) Old El Paso™ 25% Less Sodium Taco Seasoning Mix
  • 2 8-ounce packages reduced-fat cream cheese (Neufchâtel), softened
  • 2 cans (16 oz) Old El Paso™ Fat Free Refried Beans
  • 2 tablespoons lemon juice
  • 3 avocados, halved, seeded, peeled and mashed
  • 1/2 cup fat-free sour cream
  • 1/2 cup fat-free mayonnaise
  • 8 ounces reduced-fat shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)
  • 2 cups shredded fresh spinach
  • 3 medium tomatoes, chopped
  • Assorted vegetable dippers and/or baked tortilla chips
Instructions:
  • In a large skillet, sauté ground turkey and jalapeño with half of the taco seasoning mix (about 2 tablespoons) until turkey is cooked through; then, remove from heat and set aside.
  • Preheat oven to 325°F. Spread cream cheese evenly in a 13x9x2-inch baking dish. Layer with refried beans on top of the cream cheese. Mix lemon juice with mashed avocado and spread over the beans. Combine sour cream, mayonnaise, and taco seasoning in a small bowl, then spread over the avocado layer. Add the ground turkey mixture and sprinkle with cheese. Bake until golden and bubbly.
  • Bake uncovered for approximately 25 minutes, until heated through and cheese is perfectly melted. Add a sprinkle of green onions, shredded spinach, and chopped tomatoes for freshness. Serve alongside vegetable dippers and/or baked tortilla chips.
