Healthy skillet lasagna ready in 30 minutes with significantly less fat and calories than traditional recipe.
Ingredients:
  • 1 lb extra-lean (at least 93%) ground beef
  • 1 small onion, chopped (1/3 cup)
  • 2 cloves garlic, finely chopped
  • 1 jar (25.5 oz) Muir Glen™ organic Italian herb pasta sauce
  • 1 1/2 cups water
  • 1 tablespoon ketchup
  • 3 cups (6 oz) uncooked mini-lasagna noodles (mafalda)
  • 1/2 cup chopped green bell pepper
  • 1 teaspoon dried basil leaves
  • 1 cup shredded reduced-fat Italian cheese blend (4 oz)
Instructions:
  • In a spacious nonstick skillet, sauté ground beef, onion, and garlic on medium-high heat for 5 to 7 minutes, stirring occasionally, until the beef is fully cooked; then drain the excess fat.
  • Add in all other ingredients except for the cheese. Bring to a boil, then lower the heat and let it simmer uncovered for 10 to 12 minutes, stirring occasionally. Lastly, sprinkle with cheese before serving.
