Indulge guilt-free with our healthier blueberry scones, packed with fiber and antioxidants.
Ingredients:
  • 2 tablespoons toasted, flaxseed*
  • 11/2 cups Gold Medal™ all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold butter, cut into pieces
  • 1 6-ounce carton Yoplait® Fat Free plain yogurt
  • 1 egg white, lightly beaten
  • 11/4 cups fresh blueberries
  • Fat-free milk
  • Rolled oats and/or flaxseeds (optional)
Instructions:
  • Preheat the oven to 400°F. Prepare a baking sheet with foil or parchment paper. Grind toasted flaxseeds in a spice grinder to a fine powder.
  • Mix together ground flaxseeds, flour, 1/2 cup oats, sugar, baking powder, and salt in a medium bowl. Use a pastry blender to incorporate the butter until the mixture looks like coarse crumbs. Create a well in the center of the dry ingredients; set aside.
  • Combine creamy yogurt with a fluffy egg white in a medium bowl. Carefully fold in fresh, juicy blueberries. Pour all of the yogurt mixture at once into the flour mixture. Using a fork, gently stir until everything is just moistened.
  • Transfer the dough to a floured surface. Knead by folding and gently pressing for 10 to 12 strokes until smooth. Shape dough into a 10-inch circle, then cut into 12 wedges.
  • Arrange the wedges 1 inch apart on the baking sheet. Brush the scones with milk and optionally sprinkle with extra oats and/or flaxseeds. Bake for 16 to 18 minutes until they turn golden brown. Serve the scones warm.
