Sliced fennel, orange & almond salad

Ingredients:
  • 3 bulbs of fennel
  • 1 handful of almonds
  • 3 oranges
  • a few springs of fresh mint
  • 2 handfuls of rocket
  • sherry vinegar
  • extra virgin olive oil
Instructions:
  • Peel the fennel with a speed peeler and soak in ice water. Toast the almonds in a dry frying pan, then crush in a mortar and pestle. Thinly slice the oranges and lay them on a platter. Pick the mint leaves. Remove the fennel from water, dry in a salad spinner, then combine with mint, rocket, a splash of sherry vinegar and oil. Season with sea salt and black pepper. Sprinkle the fennel mix over the oranges and garnish with toasted almonds.
