Succulent lamb mince on a soft burger bun for the ultimate comfort food experience.
Ingredients:
9.20 gm olive oil or canola oil
500g 3 star lamb mince
1 medium brown onion
1/2 red capsicum
1celerystick
2clovesgarlic
187.50 gm water
130.00 gm tomato sauce
31.50 gm soy sauce
36.60 gm Worcestershire sauce
22.20 gm tomato paste
4hamburger buns
125.00 ml reduced-fat Greek-style yoghurt
1/2 tsp lime zest
10.60 gm fresh lime juice
1.3.00 gm ground cumin
1/4 green drumhead cabbage
1/4 continental cucumber
40.00 ml fresh mint, chopped
Instructions:
Preheat a large heavy frying pan over medium-high heat. Add oil followed by the lamb mince. Cook and crumble the mince with a spoon for approximately 8 minutes until browned. If needed, strain the cooked mince in a sieve to remove excess oil before returning it to the pan.
Lower the heat to medium, and incorporate the onion, capsicum, celery, and garlic. Saute, stirring frequently, for roughly 5 minutes until the onion turns translucent. Pour in the water and deglaze the pan for about 1 minute until the liquid reduces by half.
Lower the heat to medium-low. Add tomato sauce, soy sauce, Worcestershire sauce, and tomato paste. Cook for approximately 8 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
In a big bowl, combine yogurt, lime zest, lime juice, and cumin. Add cabbage, cucumber, and mint, then mix well. Season with salt and pepper to taste.
Assemble by spooning the lamb mixture onto the bun bottoms, topping with slaw, and finishing with the bun tops. Serve the remaining slaw on the side. Enjoy your sloppy Joes!
