Sloppy Joe filling over crispy oven-baked wedges for a delicious and satisfying meal.
Ingredients:
  • 600g pkt frozen chilli & sea salt potato wedges
  • 18.20 gm Brand Pure Olive Oil
  • 1 green capsicum, finely chopped
  • 500g Beef Mince 3 Star
  • 23.40 gm mild American mustard
  • 125.00 ml Grown Tomatoes Tomato Sauce
  • 125.00 ml Brand Australian Shredded Pizza Cheese
  • 62.50 ml flat-leaf parsley, chopped
Instructions:
  • Preheat oven to 240C or 220C fan forced. Bake the potato wedges on a baking tray in a single layer for 15 minutes or until they turn golden brown. Serve hot in heatproof dishes.
  • Start by heating oil in a large frying pan over high heat. Sauté onion, capsicum, and garlic until soft, approximately 5 minutes. Add the mince and cook until browned, breaking it up with a wooden spoon. Mix in mustard, vinegar, tomato sauce, and 1/3 cup water. Bring to a boil, then reduce heat and simmer until thickened, about 5 minutes.
  • Preheat the grill to high. Spoon the mince mixture over the wedges and sprinkle with cheese. Grill for 3-4 mins until golden. Garnish with fresh parsley before serving.
