Succulent slow cooker barbecue chicken for two using pantry staples.
Ingredients:
  • 2 boneless chicken breasts
  • 1 (18 ounce) bottle barbecue sauce, divided
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons brown sugar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon red pepper flakes
Instructions:
  • Season chicken breasts generously with freshly ground salt and black pepper on all sides. Transfer the seasoned chicken breasts to a slow cooker and drizzle 1/4 cup of barbecue sauce and vinegar over the top.
  • Slow cook for 3 hours.
  • Mix together brown sugar, onion powder, garlic powder, and red pepper flakes in a small bowl.
  • Drain liquid from slow cooker and mix in the rest of the barbecue sauce. Sprinkle chicken evenly with the brown sugar and spice blend.
  • Simmer on Low, stirring occasionally, until the chicken is cooked through and the juices run clear, for approximately 3 more hours. Check for doneness by inserting an instant-read thermometer into the center; it should read at least 165 degrees F (74 degrees C).
