Delicious barbecue chicken thighs with a sweet, smoky, and spicy kick. Perfect for parties, easy to make in the slow cooker. Homemade sauce with plenty of flavor to coat the chicken. It's all about the sauce!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 1/2 teaspoons chili powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup ketchup
  • 2 tablespoons packed brown sugar
  • 2 tablespoons mild-flavor (light) molasses
  • 2 tablespoons cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 16 boneless skinless chicken thighs (about 3 1/2 lb)
  • 1 1/2 teaspoons salt
Instructions:
  • Coat a 4-quart slow cooker with cooking spray.
  • In a 2-quart saucepan, warm oil over medium heat, then sauté the onion for 4 to 6 minutes until softened.
  • Add the fragrant garlic, spicy chili powder, and zesty pepper flakes to the pan; sauté and stir for 1 minute. Pour in the rich ketchup, sweet brown sugar, velvety molasses, tangy vinegar, savory Worcestershire sauce, and pungent mustard; bring to a vigorous boil. Lower the heat and simmer without a lid for 10 to 15 minutes until the sauce slightly thickens, giving it a gentle stir now and then. Take the pan off the heat. Transfer 1/2 cup of this luscious sauce to the slow cooker; cover and store the rest in the fridge for later use.
  • Season the chicken with a pinch of salt, then place it in the slow cooker. Coat the chicken with the sauce by gently tossing it. Cover and cook on Low heat for 3 hours and 30 minutes to 4 hours, or until the chicken reaches an internal temperature of at least 165°F.
  • Remove liquid from slow cooker and discard. Pour the reserved sauce over the chicken and mix well to coat. Increase the heat setting to High, cover, and cook for 15 to 20 minutes or until hot.
