Slow-cooked butter chicken in creamy, aromatic Indian curry sauce for a restaurant-quality meal at home!
Ingredients:
  • 2 tablespoons vegetable oil
  • 4 large skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon curry paste
  • 2 teaspoons curry powder
  • 2 teaspoons tandoori masala
  • 1 teaspoon garam masala
  • 15 green cardamom pods
  • 1 (14 ounce) can coconut milk
  • 1 cup low-fat plain yogurt
Instructions:
  • Assemble all the ingredients.
  • In a large skillet over medium heat, melt butter with vegetable oil. Add chicken, onion, and garlic, cooking and stirring until the onion is soft and translucent, about 10 minutes.
  • Incorporate tomato paste, curry paste, curry powder, tandoori masala, and garam masala until the mixture is smooth.
  • Transfer the mixture into a slow cooker and gently mix in fragrant cardamom pods, creamy coconut milk, and tangy yogurt. Finish off by seasoning with a touch of salt to enhance flavors.
  • Cook on High for 4 to 6 hours or on Low for 6 to 8 hours until the chicken is tender and the sauce has reduced to your liking. Remember to remove and discard the cardamom pods before serving.
