Slow-cooker chicken with pesto butter

Effortlessly cook up a delicious pesto chicken dish in your slow cooker. Enjoy the simplicity!
Ingredients:
  • 1.6kg whole chicken
  • 60g butter, softened
  • 40.00 ml basil, cashew and parmesan dip
  • 40.00 ml chopped fresh basil leaves
  • 1 garlic clove, finely chopped
  • 18.20 gm olive oil
  • Steamed vegetables, to serve
Instructions:
  • First, wash the chicken thoroughly under cold running water, making sure to include the cavity. Then, dry it off with a paper towel. Use your fingers to delicately create 2 pockets by gently lifting the skin away from the breast meat on each side.
  • In a bowl, mix together butter, dip, basil, and garlic. Carefully slide the butter mixture under the chicken skin without tearing it.
  • In a large frying pan, heat oil and add chicken, skin side down. Cook until golden on both sides for about 10 minutes. Place a wire rack in a 5-liter slow cooker, then put the chicken on the rack, skin side up. Season with salt and pepper, cover, and cook on low for 4 hours until the chicken is tender and fully cooked.
  • Garnish the succulent chicken with a colorful array of fresh, sautéed vegetables for a delightful presentation.
