Elevate your candied yams with vibrant purple ube yams for a stunning holiday twist.
Ingredients:
  • nonstick cooking spray
  • 2 large purple yams, peeled and cut into 1/4-inch slices
  • 2 cups brown sugar
  • 0.25 cup melted butter
  • 2 teaspoons vanilla extract
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons shredded coconut
Instructions:
  • Grease the slow cooker with cooking spray.
  • Create a beautiful blanket of yam slices in the slow cooker and sprinkle generously with brown sugar, layer by layer, until all yams are snug in the pot.
  • Combine the velvety melted butter, aromatic vanilla extract, and a hint of salt in a small bowl, then drizzle the mixture over the luscious yams nestled in the slow cooker.
  • Cook yams until they are tender when pierced with a fork, either for 4 hours on Low or 2 hours on High. Transfer the cooked yams to a serving dish.
  • Transfer the flavorful slow cooker juices into a small saucepan and gently simmer over medium-low heat until they come to a gentle boil.
  • Combine cornstarch and water in a bowl until smooth. Incorporate into the saucepan, stirring constantly until the sauce thickens. Pour over yams and top with shredded coconut.
