Southern-style candied sweet potatoes slow-cooked in a buttery, spiced sugar syrup for a sweet and comforting dish.
Ingredients:
  • 6 large sweet potatoes
  • 0.5 cup butter
  • 2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 tablespoon vanilla extract
Instructions:
  • Prepare the sweet potatoes by peeling and slicing them into 1/4-inch-thick rounds.
  • Heat the butter in a heavy skillet over medium heat until melted, then add the potatoes.
  • Combine sugar, cinnamon, nutmeg, and salt in a bowl, then pour the mixture over the potatoes and stir well. Cover the skillet, simmer on low heat, stirring occasionally, until the potatoes are tender and "candied," about 1 hour. Watch as the sauce darkens while cooking.
  • Just before serving, gently mix in the vanilla to enhance the flavors. Serve the dish while it's still hot for the best taste.
