Crockpot cheesy chicken and rice with corn, Cheddar, and seasoned rice for a delicious weeknight meal.
Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 large sweet onion, chopped
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 2.5 cups water
  • 1 (8 ounce) package yellow rice mix (such as Zatarain's®)
  • 1 tablespoon butter
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup shredded Cheddar cheese
Instructions:
  • Lay the chicken at the base of the slow cooker, spread onions on top, then generously coat everything with condensed soup.
  • Slow cook on low for 7 to 8 hours or on high for 3 to 4 hours.
  • As the chicken nears completion, mix water, rice blend, and butter in a 2-quart saucepan until fully combined. Boil the mixture, then lower the heat, cover, and simmer for 25 minutes until the rice is tender.
  • Gently fold in cooked rice, sweet corn, and sharp Cheddar cheese into the slow cooker just before serving. Enjoy while hot.
