Slow-cooked roux elevates the flavor of classic gumbo.
Ingredients:
  • 0.33333334326744 cup vegetable oil
  • 0.33333334326744 cup all-purpose flour
  • 3 cups water
  • 0.75 pound smoked sausage, quartered lengthwise and sliced
  • 1.5 cups cubed cooked chicken
  • 2 cups sliced okra
  • 1 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped celery
  • 4 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon cayenne pepper
Instructions:
  • In a saucepan over medium-high heat, warm the vegetable oil until shimmering. Gradually whisk in the flour until a smooth, thick paste forms, cooking for about 3 minutes.
  • Whisk constantly over medium heat until the flour transforms into a dark reddish-brown roux, approximately 15 minutes. Let it cool before using.
  • Add water to the slow cooker for a perfect base.
  • Add the flavorful roux, sausage, chicken, okra, onion, bell pepper, celery, garlic, and a perfect balance of salt, black pepper, and cayenne pepper. Mix well.
  • Slow cook on Low for 6 to 7 hours with the dish covered.
  • Remove excess fat using a spoon.
