Slow cooker chicken Marsala: Tender chicken cooked low and slow in a flavorful Marsala wine sauce.
Ingredients:
  • 2 cloves garlic cloves, minced
  • 0.25 cup all-purpose flour
  • 3 pounds skinless, boneless chicken breast, cut into 2-inch cubes
  • 12 ounces sliced white mushrooms
  • 1 cup Marsala wine
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1 tablespoon chopped fresh parsley for garnish
Instructions:
  • Combine oil and garlic in the slow cooker bowl.
  • Combine flour, salt, and pepper in a resealable plastic bag. Toss in chicken, seal, and shake to coat. Transfer coated chicken to the slow cooker and add mushrooms.
  • In a small frying pan, simmer Marsala wine over medium-high heat until reduced, for about 2 to 3 minutes. Then, pour this flavorful reduction into the slow cooker with the chicken and mushrooms.
  • Slow cook until the sauce thickens, the chicken is fully cooked, and the juices run clear, about 4 to 5 hours. Use an instant-read thermometer to ensure the chicken reaches at least 165 degrees F (74 degrees C) in the center.
  • To thicken the sauce, combine water and cornstarch in a small bowl, then gradually pour into the slow cooker. Cook on High until thickened for about 15 minutes. Season to taste, garnish with parsley, and serve.
