Cheesy chicken quesadillas - a flavorful, easy dinner for picky eaters.
Ingredients:
  • 1 (10 ounce) can red enchilada sauce
  • 0.25 cup water
  • 1 (1.25 ounce) package reduced-sodium taco seasoning mix
  • 2 skinless, boneless chicken breasts
  • 1 (10 ounce) package 8- to 10-inch flour tortillas
  • 1 (12 ounce) bag shredded Mexican cheese blend
Instructions:
  • In a slow cooker, mix enchilada sauce, water, and taco seasoning. Slice the chicken breasts in half lengthwise and add them to the slow cooker. Cook on Low for 4 to 5 hours until the chicken is tender.
  • Shred the chicken using 2 forks and mix it back into the flavorful sauce in the slow cooker.
  • Spread a generous amount of the flavorful chicken mixture onto a tortilla, sprinkle a generous amount of shredded cheese on top, then sandwich it with another tortilla.
  • Preheat a large nonstick skillet over medium heat. Add the quesadilla and cook until both sides are golden brown, approximately 2 to 4 minutes total, flipping once. Repeat with the rest of the tortillas, chicken, and cheese.
