Satisfying slow cooker chicken stock - perfect for soups, risotto or sipping. Freeze for later!
Ingredients:
  • 1 chicken carcass (from a cooked 4-pound chicken)
  • 2 stalks celery, cut in half
  • 1 carrot, scrubbed clean and ends trimmed, cut in half
  • 1 medium onion, quartered
  • 4 cloves garlic, smashed
  • Large handful parsley stems, large enough that the stems bundled together are the size of a quarter
  • 4 to 5 large sprigs fresh thyme
  • 1 bay leaf
  • 1/2 tablespoon black peppercorns
  • 6 cups water
Instructions:
  • Prepare your slow cooker by plugging it in and selecting the low setting.
  • Prepare the chicken carcass: Remove any remaining meat and set aside. Discard the skin. Break the bones as needed and place them in the slow cooker along with ligaments, dark bits, and a few pieces of skin.
  • Add all remaining ingredients, including the water, to the slow cooker. Leave the garlic and onion skins on for a deeper stock color.
  • Slowly simmer the stock: Cover the slow cooker and simmer on low heat overnight for 12 to 24 hours.
  • After cooking, turn off the slow cooker and uncover it. Place a fine mesh strainer lined with cheesecloth over a bowl. Transfer the solids into the strainer. Once they're no longer dripping, discard them. Pour the remaining stock through the strainer, allowing any sediment to pass through. For a clearer stock, strain the liquid through additional layers of cheesecloth at your preference.
  • Chill the stock: Allow the stock to cool to room temperature, then transfer to containers and refrigerate overnight.
  • Remove the chicken fat: The following day, you will find a creamy fat layer on the stock. Gently skim it off and discard. The stock should be gelatinous and golden, indicating a successful outcome and a silky texture.
