Slow cooker chicken chow mein recipe

Elevate your Chinese takeaway at home with this slow cooker twist! Tender chicken, crisp veggies, and chewy noodles all in one easy dish.
Ingredients:
  • 250ml (1 cup) Chicken Style Liquid Stock
  • 42.00 gm soy sauce
  • 48.80 gm oyster sauce
  • 2 tsp sesame oil
  • 2 tsp finely grated ginger
  • 1 large carrot, peeled, halved lengthways, sliced
  • 2 chicken marylands, skin removed
  • 7.50 gm cornflour
  • 250g dried egg noodles
  • 100g snow peas, halved diagonally
  • 410g can baby corn spears, drained, halved
  • Chopped fresh coriander leaves, to serve
Instructions:
  • In a slow cooker, mix together stock, soy sauce, oyster sauce, sesame oil, and ginger. Place onion, carrot, and chicken in the slow cooker. Cover and cook on LOW for 5 hours, flipping the chicken halfway through cooking, if you can.
  • Take out the chicken from the slow cooker and transfer it to a cutting board. Switch the slow cooker to HIGH heat. Mix cornflour with 1 tablespoon of water until smooth. Pour the mixture into the liquid in the slow cooker. Cover and cook for 15 minutes.
  • Boil noodles in a large saucepan for 3 minutes. Add snow peas for the last 1 minute of cooking. Drain and rinse with cold water. Shred chicken from the bone using a fork.
  • Combine the chicken, noodles, snow peas, and corn in the slow cooker using tongs.
  • Garnish the chow mein with fresh coriander before serving.
