Slow-Cooker Chicken Chow Mein

Quick and easy crockpot chow mein, serves 4. Ready in 15 minutes!
Ingredients:
  • 1 tablespoon vegetable oil
  • 8 boneless skinless chicken thighs (about 1 1/2 lb)*, trimmed of excess fat, cut into 1-inch pieces
  • 2 medium carrots, sliced diagonally (1 cup)
  • 2 medium stalks celery, coarsely chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 can (8 oz) sliced water chestnuts, drained
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1/2 teaspoon finely chopped gingerroot
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • 1 cup sliced fresh mushrooms (3 oz)
  • 1 cup snow pea pods (4 oz)
  • Chow mein noodles, if desired
Instructions:
  • Heat oil in a 10-inch skillet over medium-high heat. Brown chicken in the hot oil for about 5 minutes, flipping once.
  • Prepare the slow cooker by spraying it with cooking spray. Add carrots, celery, onion, garlic, and water chestnuts to the slow cooker, then layer with chicken. In a small bowl, combine broth, soy sauce, and gingerroot, then pour over the chicken. Cover and cook on low heat for 6 to 8 hours.
  • In a small bowl, whisk together cornstarch and water until well combined. Add the mixture to the chicken, then stir in the mushrooms and pea pods. Turn the heat to High, cover, and cook for an additional 15 minutes. Serve the dish over noodles.
