Slow cooker chicken thighs with green beans and potatoes: Keep juicy chicken seasoned atop veggies for perfectly cooked meal.
Ingredients:
  • 1 pound small red potatoes, cut into 1-inch pieces
  • 2 pounds fresh, whole, young green beans, trimmed
  • 2 teaspoons salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • 1/2 teaspoon red pepper flakes, optional
  • 6 slices bacon
  • 1 onion, diced
  • 2 Tablespoons minced garlic
  • 2 cups chicken broth or stock
  • 2 pounds skinless, boneless chicken thighs
  • 1/2 teaspoon paprika
  • 1/2 onion, sliced
Instructions:
  • Heat up a 5-quart slow cooker on High setting. (Refer to note.)
  • Layer the red potato pieces at the base of the slow cooker, followed by a generous topping of green beans. Season with a pinch of salt, pepper, and red pepper flakes for a flavorful kick.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Let the cooked bacon drain on paper towels, then crumble and set aside.
  • In the same skillet, sauté diced onion until just softened, for 3 to 5 minutes. Add garlic and cook for 30 seconds. Remove skillet from heat, then evenly distribute the contents over green beans. Pour chicken broth or stock over everything.
  • Lay chicken thighs on half of a 12x24-inch foil sheet. Season with salt, pepper, and paprika. Top with onion slices. Fold foil to seal into a packet similar in size to the slow cooker.
  • - Nestle the chicken on top of the green beans in the slow cooker. Cover and cook on High for about 4 hours, or Low for 6 hours, until the veggies are tender and the chicken is cooked through with clear juices. Check with an instant-read thermometer - it should register 165°F (74°C) when inserted near the center.
  • Before presenting, arrange on a serving platter and garnish with the remaining cooked bacon crumbles.
