Coffee-infused Irish stew with hearty vegetables and tender beef for a rich and flavorful meal.
Ingredients:
  • 2 pounds cubed beef stew meat
  • 2 tablespoons all-purpose flour
  • 2 large potatoes, peeled and cubed
  • 2 medium carrots, peeled and chopped
  • 1 medium onion, cut into chunks
  • 1 (14 ounce) can diced tomatoes
  • 1 cup brewed coffee
  • 1 envelope onion soup mix
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon Dijon mustard
Instructions:
  • Make sure the beef is fully enveloped in a dusting of flour.
  • In a large saute pan over medium heat, sizzle beef in oil until beautifully browned all around, for about 7 to 10 minutes.
  • Add in the beef and then layer in the potatoes, carrots, onion, diced tomatoes, coffee, soup mix, bouillon cubes, soy sauce, and mustard into the slow cooker.
  • Slow cook until the beef and vegetables are tender, for 4 to 5 hours.
