Easy weeknight Crockpot lasagna: brown beef, layer with noodles, sauce, and cheeses. Set it and forget it for a delicious meal!
Ingredients:
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 1 (29 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1.5 teaspoons salt
  • 1 teaspoon dried oregano
  • 16 ounces shredded mozzarella cheese
  • 12 ounces cottage cheese
  • 0.5 cup grated Parmesan cheese
  • 1 (12 ounce) package lasagna noodles
Instructions:
  • In a large skillet over medium heat, brown ground beef with onion and garlic. Stir in tomato sauce, tomato paste, salt, and oregano until heated through and well mixed.
  • Combine the mozzarella, cottage cheese, and Parmesan in a large bowl and mix well.
  • Start by generously spreading a portion of the savory meat mixture at the base of a slow cooker. Carefully place a double layer of dry lasagna noodles, breaking them if necessary to ensure a good fit. Sprinkle a generous amount of the cheesy mixture over the noodles. Continue this process of layering: sauce, noodles, cheese, until all components have been used.
  • Slow cook for 4 to 6 hours, covered.
