Creamy white bean chowder made with slow-cooked bacon, veggies, seasonings, and chicken broth, blended until smooth with milk for a hearty dish.
Ingredients:
  • 1.5 cups dried great Northern beans, rinsed
  • 2 cups water
  • 6 slices bacon
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 onion, chopped
  • 1 potato - peeled and cubed
  • 1 teaspoon Italian-style seasoning
  • 0.125 teaspoon ground black pepper
  • 3 (14.5 ounce) cans low-sodium chicken broth
  • 1 cup milk
Instructions:
  • In a large bowl, combine the beans with water, cover, and let soak overnight.
  • Fry bacon in a large skillet until crispy. Drain and crumble the bacon, then set aside.
  • In a slow cooker, mix together carrot, celery, onion, potato, Italian-style seasoning, black pepper, beans, and bacon. Pour in the broth.
  • Cook the beans on low heat for 7 1/2 to 9 hours, or until they are perfectly tender.
  • In batches, blend 2 cups of the mixture until smooth using a blender or food processor. Return everything to the slow cooker, pour in the milk, cover, and heat on high for 10 to 15 minutes, or until heated through.
