Indulge in the perfect holiday treat with this decadent slow cooker pecan pie bread pudding.
Ingredients:
  • 1.5 cups packed brown sugar
  • 1 cup chopped pecans
  • 0.5 cup unsalted butter, softened
  • 1 (16 ounce) loaf day-old French bread, cut into 3/4-inch cubes
  • 2.5 cups milk
  • 1 cup half-and-half
  • 4 large eggs, lightly beaten
  • 0.5 cup white sugar
  • 1 tablespoon vanilla extract
  • 0.125 teaspoon salt
  • butter-flavored nonstick cooking spray
Instructions:
  • In a small bowl, mix brown sugar, pecans, and softened butter until well blended using a fork.
  • In a large bowl, combine bread cubes. In a separate bowl, whisk together milk, half-and-half, eggs, sugar, vanilla, and salt. Pour over the bread and allow it to absorb the liquid for 5 to 10 minutes.
  • 1. Prepare the slow cooker by lightly coating it with nonstick spray. 2. Layer half of the bread mixture into the slow cooker, followed by half of the pecan mixture. 3. Repeat the layers once more and gently press down.
  • Cook on Low with the dish covered until a knife comes out clean when inserted in the center, approximately 3 hours.
