Effortlessly tender slow cooker pork belly recipe.
Ingredients:
  • 131.25 gm apricot nectar
  • 130.00 gm tomato sauce
  • 24.40 gm Worcestershire sauce
  • 40.00 ml sherry vinegar
  • 45.00 gm dark brown sugar
  • 2 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp cracked black pepper
  • 2.40 gm salt
  • 1.4kg piece boneless pork belly
  • Steamed lemon green beans, to serve
  • Steamed halved asparagus, to serve
Instructions:
  • Mix together the nectar, sauces, vinegar, sugar, onion powder, oregano, pepper, and salt in a bowl.
  • Score the pork rind in a diamond pattern. Spread half of the sauce mixture in the slow cooker. Place the pork, rind-side down, in the slow cooker. Pour the remaining sauce over the pork. Cover and cook on high for 3 hours (or low for 6 hours). Turn the pork and cook on high for 1 more hour (or low for 2 hours) until the pork is tender.
  • Gently place the pork on a serving platter, then generously drizzle with the flavorful pan juices. Serve alongside steamed lemon green beans and asparagus for a delightful meal.
