Perfectly tender Slow Cooker Pot Roast with hearty potatoes and savory mushrooms, simmered to perfection for a hands-off, delicious meal.
Ingredients:
  • 2 teaspoons kosher salt
  • 2 teaspoons fresh cracked pepper
  • 2 teaspoons garlic powder
  • 3 pounds beef chuck arm or rump roast
  • 1 tablespoon canola oil
  • 5 sprigs fresh thyme
  • 1 large onion, quartered, peeled
  • 1 bay leaf
  • 3/4 cup red wine
  • 3 tablespoons Worcestershire sauce
  • 2 cups beef stock
  • 3 large cloves garlic, smashed
  • 8 ounces cremini mushrooms, halved
  • 6 carrots, peeled and halved
  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons cornstarch
Instructions:
  • Enhance the roast's flavors: Mix salt, pepper, and garlic powder, then massage onto all sides of the roast. Heat oil in a medium skillet over medium-high heat until shimmering, then sear the roast on all sides for roughly 5 minutes. Place the seared roast into the slow cooker, tucking in thyme, quartered onion, and bay leaf around it.
  • Deglaze the skillet: Lower the heat to medium and pour in the wine, Worcestershire sauce, and garlic cloves to release all the flavorful brown bits from the bottom of the pan. Let it simmer for 1 to 2 minutes until the alcohol evaporates. Turn off the heat.
  • Place the mushrooms, carrots, and potatoes around the roast in the slow cooker. Pour in the wine and beef stock from the skillet.
  • Cook with ease: Secure the lid and let it simmer on high for 4 to 5 hours, or on low for 8 to 10 hours.
  • Create a delicious gravy: Transfer 2 cups of the flavorful slow cooker liquid to a saucepan. Bring it to a gentle boil over medium-high heat. Mix 2 tablespoons of cornstarch with 3 tablespoons of water to make a slurry. Gradually whisk the slurry into the boiling liquid until it thickens to honey-like consistency in about a minute. Remove from heat once thickened. Drizzle the savory gravy over the pot roast and veggies, and adjust seasoning with more salt and pepper if desired.
