Slow-Cooker Pot Roast with Creamy Dill Sauce

Creamy dill sauce elevates classic beef stew with tender vegetables.
Ingredients:
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 boneless beef pot roast (about 2 lb), trimmed of fat
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, finely chopped
  • 1/2 teaspoon dried dill weed
  • 1 large onion, cut into 12 wedges
  • 1 bag (16 oz) ready-to-eat baby-cut carrots
  • 4 medium Yukon gold potatoes (about 1 1/4 lb), unpeeled, cut into 1-inch cubes
  • 1/2 teaspoon lemon-pepper seasoning
  • 2 tablespoons water
  • 1 teaspoon dried dill weed
  • 1 cup fat-free sour cream
Instructions:
  • Combine 2 tablespoons of flour, 1 teaspoon of salt, and white pepper on a sheet of waxed paper or in a shallow bowl. Coat the beef evenly with the flour mixture.
  • Prepare the slow cooker by spraying it with cooking spray. Heat a large nonstick skillet over medium-high heat. Cook the beef in the skillet for about 5 minutes, flipping it once, until it is golden brown on both sides. Transfer the beef to the slow cooker.
  • Combine broth, mustard, garlic, and dill weed in a small bowl. Pour this flavorful mixture over the beef in the cooker, then layer onion, carrots, and potatoes on top. Finish with a sprinkle of zesty lemon-pepper seasoning.
  • Cover and simmer on low heat for 9 to 10 hours.
  • Transfer the beef and vegetables from the cooker to a large serving platter, cover to keep warm. In a small bowl, whisk together all sauce ingredients except sour cream until smooth.
  • After removing any fat from the liquid in the cooker, transfer it to a 1-quart saucepan and bring it to a boil over high heat. Add the flour mixture and continuously stir for 2 to 3 minutes until it thickens. Take the saucepan off the heat and gently mix in the sour cream.
  • Cut the beef into 8 delicious serving pieces and generously ladle the sauce over the beef and colorful vegetables for a mouthwatering presentation.
