Lean pot roast with creamy mushroom sauce, loaded with veggies for extra flavor and a healthier twist.
Ingredients:
  • 2 (10.75 ounce) cans low-fat, low-sodium condensed cream of mushroom soup
  • 1 large onion, chopped
  • 3 pounds chuck roast
  • 2 cups sliced carrots
  • 1 pound small red potatoes
  • 0.5 pound string beans
  • 0.25 cup chopped parsley
Instructions:
  • Combine the cream of mushroom soup, chopped onion, and chuck roast in the slow cooker.
  • Add carrots, potatoes, string beans, and parsley to the pot roast 1 1/2 hours before it's finished cooking on Low for 8 to 9 hours or High for 3 to 4 hours.
